As your hometown coffee roastery, we pride ourselves on traveling to the farms of our coffee producers to follow through on our passion for high quality sustainably grown coffees.
Through November, we will be featuring an exciting new coffee coming to us from our new Deeper Roots Coffee family, Colombia Tolima. Through a 10 year old relationship with exporting partners, Pergamino Coffee Exporters, we bring you this coffee from the region of Tolima in the district of Ibagué.
In November 2013, Adam Shaw, the director of coffee for Deeper Roots Coffee, our sister company, traveled to the coffee-producing region of Tolima to see first-hand the quality of the coffee farms along with their partners Pergamino Coffee Exporters. While there, Adam had the privilege of visiting 5 different farms and was able to cup coffee with the farmers. Fast-forward 10 years and Deeper Roots and Vienna Coffee continues its relationship with this amazing coffee-producing region.

“Ibagué is the capital of Tolima, a well known coffee producing region of Colombia. Although most of the coffee from this states comes from its Southern region of Planadas and Chaparral, we decided to focus on the less well known coffee growing areas around Ibagué. In the towns of China Alta and Anzoetegui, Pergamino works with around 50 growers to deliver their coffees to our logistical ally in Ibagué, where we have a warehouse and a cupping lab. Growers usually bring week lots of around 100-500kgs of parchment, which we analyze one by bone before deciding to incorporate them into the lots we are building for export.
The city is also known as the “Ciudad del Abanico” or the city of the folding fan, because when you look at it from the sky the way its rivers spread out of the mountains creating farms for rice and cotton looks like a beautiful handmade folding fan. Initially known during colonial times for its rich gold mines, Ibagué is known as a bustling metropolis of 400,000 people who are truly connected to the coffee growing area around it.”
